There is nothing that says "German Soul Food" quite like the combination of savory sausages and perfectly seasoned cabbage. Today, I’m sharing my personal twist on this classic: Bratwurst with Braised Savoy Cabbage, featuring a secret ingredient that balances the acidity perfectly—dark honey.

​The Secret is in the Resting Time

​Most people make the mistake of serving this dish immediately. My secret? Let it rest for 30 minutes. This allows the juices from the seared sausages to melp with the honey-glazed cabbage, creating a rich, deep flavor profile that you simply can't get any other way.

​🛒 Ingredients

  • Quality Bratwurst 
  • 1 Head of Savoy Cabbage (Finely shredded)
  • 1 Large Onion (Sliced)
  • Garlic Cloves (Crushed)
  • Bay Leaves
  • 1 tbsp Dark Smooth Honey (The game changer!)
  • Vinegar (Apple cider or white wine vinegar)
  • Salt & Black Pepper
  • Olive Oil

​👨‍🍳 Step-by-Step Instructions

​1. The Cabbage Base

​Start by finely shredding the cabbage. In a large pan, heat some olive oil and sauté the onion, garlic, and bay leaves until fragrant. Add the cabbage and cook until it begins to soften and "wilt" into the flavors of the aromatics.

​2. The Sweet & Sour Glaze

​Once the cabbage has softened, add one tablespoon of dark smooth honey. Season generously with salt and pepper, and deglaze with a splash of vinegar. The honey adds a beautiful mahogany color and cuts through the sharpness of the vinegar.

​3. Searing the Sausages

​In a separate pan over high heat, sear the sausages. You want a deep, golden-brown crust on the outside while keeping them juicy on the inside.

​4. The Union

​Transfer the seared sausages into the pan with the cabbage. Let them cook together for another 10 minutes on low heat so the flavors can introduce themselves.

​5. The Golden Rule: The 30-Minute Rest

​Turn off the heat, cover the pan, and wait 30 minutes. This is the hardest part, but it’s what transforms a "normal" meal into a masterpiece.
