Fresh Tortellini with Fassona Beef and Thyme 🍝🧈
Ingredients:
- Fresh Tortellini (meat or cheese filled)
- Fassona Beef (cubed or minced)
- High-quality Butter
- Fresh Thyme
- Salt and Black Pepper
- Pasta water (the secret for the creaminess!)
Instructions:
- Sauté the Beef: In a pan, sear the Fassona beef with a touch of olive oil or a small knob of butter until browned. Season with salt and pepper.
- Make the Butter Sauce: Add a generous amount of butter to the pan along with fresh thyme sprigs. Let the butter melt and infuse with the thyme over low heat.
- Boil the Pasta: Cook the fresh tortellini in salted boiling water for a few minutes (until al dente).
- Emulsify: Transfer the tortellini directly into the pan with the beef and butter. Add a splash of starchy pasta water.
- Toss: Stir everything over medium heat for 1 minute until the water and butter form a silky, golden cream.
- The Master Touch:Finish with more fresh thyme and a crack of black pepper. Remove the pan from the heat. Add a generous handful of freshly grated Parmigiano Reggiano. Toss vigorously until the cheese melts into the butter and pasta water, creating a perfect, velvety cream.
